These Amazing Peanut Butter Cookies  are simple to make but not simple in taste. Whether you roll them in sugar or dip them in chocolate, this mouth-watering experience will not allow you to stop at one. It’s like a party in your mouth! And speaking of parties…. these cookie have been known to cause a fight or two at dinner party (if they make it to the party). So make enough! 🙂 Sometimes I have to sneak them out of the house when my husband is not looking.

Soft, Chewy & Delicious!

Ingredients

1 cup butter (room temperature)

1 cup peanut butter

1 cup granulated sugar

1 cup brown sugar, firmly packed

1 teaspoon baking soda

1 teaspoon baking powder

2 large eggs (don’t use extra large)

1 ½ teaspoons vanilla

2 ½ cups plus two tablespoons flour

 

Directions

  1. Preheat oven at 375°
  2. In a small bowl combine dry ingredients & set aside.
  3. In a large bowl mix butter & peanut butter on high speed for 30 seconds.
  4. Add sugars and mix until incorporated.
  5. Add eggs & vanilla and mix until incorporated
  6. Gradually add dry ingredients to the mixture and blend until smooth. Do not overbeat.
  7. Roll dough into balls. (I use a dough scooper.)
  8. Coat with raw sugar or granulated sugar.
  9. Place balls 2” apart on a parchment lined cookie sheet. Press down with a fork making crisscross impressions.
  10. For best results, chill cookie balls before baking. They are better when chilled at least 24 hours but will do just fine with 10 – 15 minutes.
  11. Bake 7-9 minutes (9-11 minutes if they have been refrigerated). Transfer to wire rack and cool. Will make about 36 cookies. (Do not over-bake)

Dip In Sugar Before You Bake

  • Make sure you check the ingredient label on the peanut butter. I use a high-quality peanut butter that contains mostly peanuts.
  • If dough is sticky or too soft, place in refrigerator for a few minutes so they won’t spread out too much.
  • Bake until the edges are slightly brown. (If the bottoms are brown, you have over-baked.)
  • If dipping cookies in chocolate, make sure you use a quality chocolate. It will make a difference!

Dipped In Chocolate!

These cookies are delicious on their own, however, if you want to take it over the top, dip individual cookies in melted chocolate. Place on wax paper until cooled. You will be the hit of the party or the cookie circuit.
